Citrus Buttercake

Ingredients
- 125g butter
- 2 eggs
- 1 cup self-raising flour
- 1/2 cup plain flour
- 2 tsp lemon rind grated
- 2 tsp orange rind grated
- 1/3 cup freshly-squeezed orange juice
- 2/3 cup white sugar
- 1/2 tsp vanilla essence
Method
- Preheat oven to 190 C / 170 C fan-forced Grease and line base of a 20cm cake pan with baking paper.
- Place all ingredients into a mixing bowl. Blend on low speed until all ingredients are combined, then beat on medium speed for one minute.
- Pour mixture into prepared cake tin and bake for 30-35 minutes.
- Allow to cool slightly in pan before inverting onto cake cooler.
- Once cool, ice with lemon frosting, or dust with icing sugar.
