Chorizo, Prawn, and Pesto Penne

Here are the ingredients you need:
1. 250 grams of penne
2. Two tablespoons of olive oil
3. 260 grams of prawns, peeled and leaving tails intact
4. 400 grams of chorizo sausage, sliced
5. 90 grams of basil pesto
6. 50 grams of sliced black olives
7. 180 grams of cherry bocconcini, coarsely torn
8. A long red chilli, chopped (optional)
9. Flat-leaf parsley leaves, to serve
Start by cooking the penne in boiling water. Once the pasta is perfectly cooked, run it under cold water. Drain well.
In a large frying pan over medium-high heat, add a splash of cooking oil. Cook the prawns for about two minutes per side or until the prawns curl and change colour. Transfer them to a plate. Add the chorizo to the pan and stir for 3 minutes or until they are golden brown. Remove from heat.
Return the prawns to the pan with the penne, pesto, olive, bocconcini and chilli. Season and toss to combine. Sprinkle with parsley and serve immediately. This might be the easiest dish you’ll ever make – and it’s delicious too.
