Chorizo & Mozzarella Gnocchi Bake: A Deliciously Easy Recipe

This dish is the perfect comfort food for a chilly winter evening. It is easy to make and only requires a few simple ingredients that you probably already have in your pantry. The best part is that it only takes a few minutes to prepare before popping it in the oven.



To make this dish, here’s what you will need:

1 tablespoon olive oil
1/2 onion, finely chopped
1 garlic clove, crushed
100 grams chorizo, diced
1 400-gram cans chopped tomatoes
1 teaspoon sugar
300 grams fresh gnocchi
125 grams mozzarella ball, cut into chunks
A small bunch of basil, torn
Green salad to serve

To make:

1. Preheat the oven to 200 degrees Celsius.

2. Heat the oil in a medium pan over medium heat. Fry the onion and garlic for 8-10 minutes until soft. Add the chorizo and fry for 5 minutes more.

3. Tip in the tomatoes and sugar, and season. Bring to a simmer, then add the gnocchi and cook for 8 minutes, stirring often, until soft.

4. Transfer the mixture to a baking dish or six ovenproof ramekins. Top with the mozzarella and basil, then bake for 3 minutes, or until the cheese is melted and golden.

5. Season, scatter over the remaining basil and serve with a green salad.

This dish is hearty and filling but still light enough that you won't feel too stuffed afterwards. The flavours of the chorizo and tomatoes complement the gnocchi and mozzarella perfectly. The dish can be easily adapted to your liking. For example, if you're not a fan of chorizo, you could substitute it for diced chicken or bacon.
