Chocolate Souffle Puddings with Chocolate Sauce

Whipping up a delicious treat for someone to say 'I love you' is truly a special act in its own way. And we can’t think of a better way to show someone that you care about them this Valentine’s Day than with these homemade Chocolate Souffle Puddings. They are served with a rich and decadent chocolate sauce, so you can expect that they’ll taste heavenly. Every bite will make just about anybody feel the love!
Here are the ingredients you need:
1. 60g of butter
2. 35g of plain flour
3. A cup of milk
4. A tsp of vanilla extract
5. 175g of dark chocolate (70% cocoa solids), finely chopped
6. Five egg yolks
7. 150g of caster sugar
8. A tbsp Grand Marnier
9. Six egg whites
10. Double cream, to serve
Ingredients for the chocolate sauce:
1. 55g of brown sugar
2. A cup of pouring cream
3. 40g of butter
4. 180g of dark chocolate (70% cocoa solids), finely chopped
Start by preheating the oven to 200 degrees Celsius. Butter an 8 x 150ml souffle dish or any ovenproof dish. Then, prepare the pudding.
Melt some butter in a heavy-based saucepan over low-medium heat. Add the flour and let it cook for a few seconds before removing the pan from the heat. Gradually whisk in the milk and vanilla until the texture becomes smooth. Finally, add the chopped dark chocolate and mix thoroughly until it has melted. Don't worry if the mixture separates a little.
Using an electric mixer, whisk the egg yolks and half of the sugar until the texture becomes thick and pale. Add the chocolate mixture and liqueur. Mix well.
Using the same electric mixer, whisk the egg whites and a pinch of salt to soft peaks. Gradually add the remaining sugar and whisk to stiff peaks. Carefully fold the whites into the chocolate mixture (in two batches) or until just combined. Spoon the mixture into the souffle dish or the ovenproof dish before popping it in the oven for 16 to 18 minutes or until puddings are well risen.
To make the chocolate sauce, combine a quarter cup of water, sugar, cream, and butter in a small pan. Stir over medium heat or until the sugar dissolves. Add the chocolate and stir until they have melted. Serve the puddings immediately with the chocolate sauce.
