Chocolate Chip Cookie Slice

Omg this is so delicious. I made two lots on Sunday with my granddaughter's. One I made vegan by using dairy free butter and replacing the egg with 4 tablespoons of apple sauce and of course dairy free choc

Ingredients​

  • 185g butter, chopped
  • 1 cup, firmly packed) brown sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 1 3/4 cups) plain flour
  • 1 tsp baking powder
  • 3/4 cup milk choc chips

Method​

  • Step 1
    Preheat oven to 160C/140C fan forced. Grease a 16.5 x 26.5cm (base size) slice pan and line with baking paper, allowing paper to overhang long sides.
  • Step 2
    Place butter in a small saucepan over medium heat. Stir until melted. Add the sugar and stir until dissolved. Transfer to a bowl to cool slightly. Add the egg and vanilla to bowl. Whisk until combined. Sift over the flour and baking powder. Stir until combined. Stir in half the choc chips until combined.
  • Step 3
    Spread the mixture into prepared pan. Sprinkle with the remaining choc chips, pressing slightly into the dough to secure. Bake for 20 minutes or until golden around the edges. Set aside in pan to cool completely. Cut into bars to serve.
NOTE

ORIGINAL RECIPE CALLED FOR A PACKET OF
  • 156g packet Cadbury Cookies Choc Centre. I personally don't feel it needs it and is a waste of money. I have made with it and without

    Spread half the mixture over base of prepared pan. Arrange the cookies on top. Spread over the remaining mixture. Sprinkle with the remaining choc chips, pressing slightly into the dough to secure. Bake for 20 minutes or until golden around the edges. Set aside in pan to cool completely. Cut into bars to serve.
