Chocolate Cherry Balls

These are so easy and taste like a cherry ripe.

These wrapped in celo bags with a ribbon makes beautiful little gifts.

Makes 35

Ingredients

125g butter
2 cups icing sugar
1/4 cup thickened cream
1 teaspoon vanilla essence
2 cups coconut
Couple drops pink food colouring
185g dark chocolate

Method

1. Melt butter in a saucepan until it is a deep golden brown, remove from heat.
2. Stir in sifted icing sugar, cream,vanilla and coconut. Tint with a couple of drops of food colouring.
3. Roll teaspoonfuls of mixture into balls and place on trays.
4. Melt chocolate over hot water. Place a tooth pick into each ball and dip into chocolate. Place onto baking paper lined trays and refrigerate until firm
