Chocolate and Coconut Weet-Bix Slice

Ingredients
3 Weet-Bix biscuits - crushed
85 grams desiccated coconut
120 grams caster sugar
150 grams self-raising flour - sifted
2 tablespoons cocoa powder - sifted
150 grams unsalted butter - melted
1 teaspoon vanilla essence
225 grams soft icing muxture
1 tablespoon cocoa powder - extra
2 tablespoons hot water
Method
Step 1
Preheat oven to 180•C. Lightly grease a 16 cm x 26 cm baking pan and line with baking paper.
Place crushed Weet-Bix, coconut and sugar in a bowl. Sift over the flour and cocoa powder and stir.
Step 2
Melt the butter in a small saucepan over low heat. Pour over dry ingredients. Add vanilla and mix well.
Step 3
Spoon mixture into prepared pan and press down to level. Bake 15 minutes or until cooked.
Step 4
Sift icing sugar and extra cocoa powder into a small bowl. Add water and stir well. Ice slice while still hot. Chill until icing is set. Cut into squares to serve.
