Chicken with Mushroom sauce and Sweet potato Mash

If I'm eating this I leave out mushrooms 🍄 as I hate them but the family love this recipe with the mushrooms

Ingredients

2 medium orange sweet potatoes 🥔
4 single or 2 double breast fillets (700g)
2 teaspoon olive oil
1/2 cup dry white wine
1/2 cup chicken stock
20g butter
2/3 cup cream
2 tablespoons hot water
2 teaspoon tyme fresh or 1 teaspoon dried
150g button mushrooms sliced
350g fresh beans or broccoli
1/3 cup hot milk

Method

1. Boil or steam sweet potato until tender: drain
2. Slice chicken breast in half horizontally. Heat oil and half the butter in a large frying pan. Cook chicken until cooked through
( around 5 minutes each side) Remove onto a plate and cover to keep warm
3. Place mushrooms in same pan and cook until brown. Then remove to a plate
4. In the same pan add the wine and bring to the boil, stir in cream and stock. Reduce heat to low and simmer uncovered for about 10 minutes or until sauce thickens slightly. Stir in hot water, thyme and mushrooms
5. Meanwhile steam beans / broccoli until tender.
6. Mash the sweet potato with milk and remaining butter
7. Serve chicken and sauce with mashed sweet potato and beans on the side.
