Chicken Stroganoff

I love quick n easy recipes and this is one of those.

Chicken Stroganoff

Ingredients​

  • 4 bacon strips, diced
  • 500g boneless skinless chicken breasts, cut into small strips
  • 1 medium onion, chopped
  • 150g sliced mushrooms
  • 2 garlic cloves, minced
  • 1-1/2 cups chicken stock
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • Pepper to taste
  • 2 tablespoons plain flour
  • 1 cup sour cream
  • 1 packet of cooked pasta of choice
  • Additional paprika, optional

Directions​

  1. In a large skillet, cook bacon until crisp. Drain, reserving 2 tablespoons drippings; set bacon aside
  2. In the drippings, cook the chicken, onion until the chicken is no longer pink.
  3. Add mushrooms and cook until brown and soft.Add garlic; cook 1 minute longer. Add the stock , salt, paprika, pepper and bacon. Cover and simmer for 10 minutes.
  4. Combine flour and sour cream until smooth; add to the skillet. Bring to a boil; cook and stir until thickened, 2 minutes. Serve with pasta . If desired, sprinkle with paprika
