This is something you can make using up leftover chicken .

Ingredients
- 2 tablespoons mayonnaise
- 2 teaspoons honey Dijon mustard
- 1/4 teaspoon pepper
- 1 cups shredded chicken
- 1/4 cup shredded Swiss cheese
- 1 stick chopped celery
- 2 tablespoons dried cranberries
- 1 tablespoons chopped walnuts (optional)
- 1/4 teaspoon dried parsley flakes
- 2 lettuce leaves
- 4 slices pumpernickel bread, or bread of choice
Directions
- In a large bowl, combine the mayonnaise, mustard and pepper. Stir in the chicken, cheese, celery, cranberries, walnuts and parsley.
- Place lettuce on 2 slices of bread; top each with 1/2 cup chicken salad. Top with remaining bread.
