Chicken Salad Sandwich

This is something you can make using up leftover chicken .
Have a nice roast chicken dinner one night and this tasty sandwich the next.

Sandwiches have to be my favourite go to quick meals

Ingredients​

  • 2 tablespoons mayonnaise
  • 2 teaspoons honey Dijon mustard
  • 1/4 teaspoon pepper
  • 1 cups shredded chicken
  • 1/4 cup shredded Swiss cheese
  • 1 stick chopped celery
  • 2 tablespoons dried cranberries
  • 1 tablespoons chopped walnuts (optional)
  • 1/4 teaspoon dried parsley flakes
  • 2 lettuce leaves
  • 4 slices pumpernickel bread, or bread of choice

Directions​

  1. In a large bowl, combine the mayonnaise, mustard and pepper. Stir in the chicken, cheese, celery, cranberries, walnuts and parsley.
  2. Place lettuce on 2 slices of bread; top each with 1/2 cup chicken salad. Top with remaining bread.

    1 sandwich: 411 calories, 22g fat (5g saturated fat), 49mg cholesterol, 469mg sodium, 35g carbohydrate (7g sugars, 5g fiber), 20g protein.
