Chicken Parmigiana

This dish is a classic Australian dish that is not only delicious but also easy to make. It’s a great dish to make for a special occasion or to impress your guests. The chicken is coated in a mixture of breadcrumbs and Parmesan cheese and then baked in the oven (or deep fried, but we are trying to be a bit healthier). This dish is usually served with a side of chips and salad.


Ingredients:

1/2 cup plain flour

1/2 teaspoon salt

1/4 teaspoon pepper

2 eggs

1/2 cup milk

1 1/2 cups breadcrumbs

1/2 cup grated Parmesan cheese

4 chicken breasts

1/4 cup olive oil

1/2 cup tomato sauce

1/4 cup mozzarella cheese


Method:

1. Preheat the oven to 200 degrees Celsius.

2. In a bowl, mix together flour, salt, and pepper.

3. In another bowl, whisk together eggs and milk.

4. In a third bowl, mix together breadcrumbs and Parmesan cheese.

5. Dip the chicken in the flour mixture, then the egg mixture, and then the breadcrumb mixture.

6. Place the chicken on a greased baking dish and drizzle with olive oil.

7. Bake for 30 minutes.

8. Remove from the oven and top with tomato sauce and mozzarella cheese.

9. Bake for an additional 10 minutes.

10. Serve with a side salad and hot chips (if you want the chips, the salad only is healthier!)
