Chicken Meat Loaf

This recipe was sent to me by my sister inlaw in Greece . She said it was a Greek Chicken meatloaf but I think it's only the feta that makes it Greek. Serves 8!

Ingredients​

  • 1 package frozen chopped spinach, thawed and squeezed to remove water
  • 1 cup bread crumbs
  • 1 large egg, room temperature, lightly beaten
  • 1 tablespoon lemon juice
  • 2 garlic cloves, minced
  • 1-1/2 teaspoons Italian herbs
  • 1 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup crumbled feta cheese, divided
  • 1 kg chicken mince
  • 1 shallot, finely chopped

Directions​

  1. Preheat oven to 175 C or 155 fan-forced. In a large bowl, combine the first 9 ingredients. Reserve 1 tablespoon feta for topping. Add remaining feta to spinach mixture. Add chicken; mix lightly but thoroughly. Transfer to a greased 9x5-in. loaf pan.
  2. Bake , 70-80 minutes. Let stand 10 minutes before slicing. Serve with shallot and remaining 1 tablespoon feta.
