Chicken And Pea Rice

I love quick and easy one pot dishes and this is one of those.
Serve as a meal by itself or with steamed broccoli or asparagus.
Prep + cooking time 25 minutes
Serves 4

INGREDIENTS
Olive oil spray
650g chicken thigh fillets, chopped coarsely
1 1/2 cups white long grain rice
1 1/2 cups chicken Stock
3/3 cup water
1 cup frozen peas
1/2 cup coarsely chopped fresh flat leaf parsley
1/4 cup toasted slivered almonds (optional)
METHOD
1. Spray a large saucepan with oil, cook chicken over high heat in batches, until browned.
2. Return chicken to pan with rice,stock and water; bring to the boil. Reduce heat and simmer covered tightly, for 10 minutes.
3. Sprinkle peas over rice; simmer, covered tightly for 10 minutes or until rice is tender and liquid absorbed.
4. Remove from heat; stand for 5 minutes. Stir in parsley, season with salt n pepper to taste. Serve Piaf sprinkled with almonds.
