Cheesy Potato Croquettes

What if savoury and cheesy deliciousness could be rolled into one bite-sized treat? That's exactly what you'll get with Cheesy Potato Croquettes. Croquettes are a popular dish from France made of ground meat and/or vegetables, usually potato, that is coated in breadcrumbs and fried. We'll use potatoes and cheese for a delicious snack in this version. I'm telling you, you'll have trouble stopping at just one!
Ingredients:
1kg potatoes, peeled, chopped
1/3 cup finely grated parmesan
16 cherry bocconcini
2 eggs
1 cup panko breadcrumbs
1/3 cup finely chopped fresh flat-leaf parsley, plus extra to garnish
Vegetable oil for shallow-frying
Tomato relish to serve
Mayonnaise to serve
Instructions:
1. In a large pot, bring 7 cups of water to a boil. Add the cubed potatoes and cook until they become soft about 15-20 minutes. Then, mash the potato until it becomes smooth. Add parmesan and season. Cool for 15 minutes.
2. Take 2 tablespoons of potato mixture and wrap it around each bocconcini. Whisk eggs in a bowl. Mix breadcrumbs and parsley in a separate bowl. Dip the potato balls in the egg and then coat them with the breadcrumb mixture.
3. Heat oil in a medium-sized frying pan over medium heat. Put the potato balls into the frying pan and cook them for around 5 minutes until they become golden on all sides. Drain on a paper towel.
4. Serve the croquettes with relish, mayonnaise, and extra parsley.
To make your Cheesy Potato Croquettes extra special, add some finely chopped bacon to the potato mixture, smoked paprika for a smoky flavour, or finely diced jalapeno for a kick of spice.
