Cheesy Lasagne Spinach & Basil Rolls

If you’re a fan of cheeses and Italian flavours, then you simply must try this delicious Cheesy Lasagne Spinach & Basil Rolls recipe.

Made using simple ingredients, this lasagne is surprisingly easy to make and can be prepared in advance for convenient reheating in either a microwave or an oven. This crowd-pleasing lasagne will have your guests licking their lips with delight!



Ingredients:

2 cups ricotta cheese

1 cup (100g) grated mozzarella cheese

1 cup grated Parmesan cheese

2 whole eggs

2 tbsp olive oil

2 garlic cloves

10 x lasagne sheets

200g washed baby spinach

1 bunch of fresh, washed basil

Salt and pepper

Bechamel sauce

Steps:

Start by bringing a large pot of water to a boil and adding salt. Plunge the lasagne sheets into the boiling water, cooking until just al dente. Remove the pasta sheets and place in a bowl of cold water to stop the cooking process.

Meanwhile, add oil and minced garlic to a medium-heat frying pan and sauté until fragrant. Toss in the washed spinach and cook until wilted. Turn off the heat and leave to cool.

In a mixing bowl, combine the eggs with salt and pepper, ricotta cheese, ¾ cup of grated Parmesan, basil and wilted spinach. Mix the ingredients thoroughly and taste the mixture to adjust the seasoning, if needed.



Place a lasagne sheet down. Spoon two heaped tablespoons of the mixture onto the sheet and use a spatula or butter knife to spread the filling evenly across the surface. Leave a small gap at one edge and roll the lasagne sheet firmly to form a swirl. Repeat the process with further pasta sheets.

Preheat your oven to 180°C. Line the base of a suitably sized baking tray with your Béchamel sauce — this will keep the lasagnas moist. Place the lasagne rolls on top and top the rolls with Parmesan cheese and mozzarella.

Pop the tray into the oven and bake the lasagne rolls for 20-25 minutes, or until the cheese has melted and the rolls are golden brown. Enjoy!
