Cheesy Bacon Egg Muffins Recipe

Who doesn’t love bacon? And when you add cheesy, delicious eggs to the mix, you get a winning breakfast combination! These Cheesy Bacon Egg Muffins are easy to make and only require a few simple ingredients that you probably already have. In less than 15 minutes, you will have a delicious breakfast or lunch that will keep you full longer.


Ingredients:
4 large eggs
3 tablespoons milk
125g crisp-cooked bacon, crumbled
1/2 cup grated cheddar, or any cheese you like
1/4 teaspoon Italian seasoning
1/4 teaspoon crushed chilli pepper flakes (optional)
Salt and pepper to taste

Instructions:

1. Preheat oven to 200°C.

2. Grease a muffin pan with oil or non-stick cooking spray.

3. Whisk together eggs, milk, salt, and black pepper in a large mixing bowl. Stir in cooked bacon, grated cheese, Italian seasoning, and red chilli pepper flakes (if using).

4. Divide the mixture evenly into muffin cups, filling each about 2/3 full. Top with additional bacon and cheese, if desired.

5. Bake egg muffins for 12-15 minutes, or until set. Allow to cool a bit and serve your cheesy bacon egg muffins immediately, or enjoy cold or at room temp.

To make this dish extra special, serve with a side of fresh fruit or a green salad. And if you’re feeling really indulgent, add a dollop of sour cream on top. So good!
