Cheesecake lovers rejoice! You can now make your own mini Snickers cheesecakes at home

Move over, store-bought cheesecakes – there's a new sheriff in town, and its name is... homemade mini Snickers cheesecake!

If you're drooling just reading those words, you're not alone. In fact, we here at the SDC are pretty darn excited about this delicious dessert as well.

Thanks to popular foodie Eloise Head (known online as Fitwaffle), we now have a recipe that'll show us how to make our very own mini Snickers cheesecakes at home. And believe us when we say they look - and probably taste - absolutely delicious!

In a video posted to Instagram, Head shared her simple recipe for these delectable little cakes. She said they have a buttery biscuit base with a Snickers cheesecake filling, all drizzled with melted chocolate and topped with crushed peanuts and caramel sauce.

Now let’s get to the recipe!

To make the base of these sinfully good snacks, start by finely crushing 150g of Digestive biscuits in a food processor then mixing the crumbs in a bowl with 60g of melted butter.

Other possible bases for cheesecakes include Milk Arrowroot and Biscoff cookies – don’t be afraid to experiment!

Next, add cupcake wrappers to a muffin pan and divide the base mix into each one using an ice cream scoop or a spoon. Make sure to press down firmly!

In a separate bowl, whisk around 150ml of chilled double cream until it has a light and fluffy consistency.

Next, add 270g of cream cheese, 80g of caramel (canned is fine), and 50g of icing sugar.

Just whisk everything together until combined, and then fold in some chopped-up Snickers — about 70g — until evenly distributed throughout before spooning it on top of each biscuit base.

Now pop your tray of delectable desserts into the freezer for at least 30 minutes so they can firm up nicely.

The next steps are pretty straightforward; all you need to do is drizzle some melted chocolate on top of each cake before sprinkling over some chopped peanuts and a little extra blob of caramel.

Afterwards, put them back in the freezer for a further 10-15 minutes to set before devouring!

Voilà! You now have a batch of approximately 18 delicious and dangerously addictive mini Snickers cheesecakes to enjoy.

We're not drooling, you are!
