Charred corn and fish tacos

Who here doesn't love tacos? I'm pretty sure no one. But sometimes, the same old tacos can get a bit boring, not to mention unhealthy. So why not spice things up with a healthier alternative - Charred Corn and Fish Tacos? This dish combines flavoursome and healthy ingredients making it an excellent choice. It’s a delicious, healthy, easy-to-prepare dish that can be eaten as a snack, lunch, or dinner.

Ingredients:

1 tsp ground cumin

1 tsp smoked paprika

1⁄4 tsp dried chilli flakes

500g firm white fish fillets (such as flathead)

1 corncob

150g green beans, trimmed

1 cucumber, finely chopped

1 long fresh green chilli, de-seeded, finely chopped

1 tbsp fresh lime juice

1⁄2 avocado, sliced

8 x 21g corn tortillas, warmed or chargrilled

Fresh coriander sprigs to serve

Lime wedges to serve



Instructions:

1. Combine cumin, paprika, and chilli flakes on a plate. Coat both sides of the fish fillets with the spice mixture.

2. Preheat a barbecue grill or chargrill pan on medium-high. Lightly spray the corncob and fish with oil. Cook the corncob for 8-10 minutes, turning occasionally until it is lightly charred and tender. Transfer it to a plate. Add the fish to the grill and cook for 3-4 minutes on each side or until it is cooked through. Once done, transfer the fish to the plate and set it aside to cool slightly.

3. Meanwhile, cook the green beans using a steamer basket over a saucepan of boiling water for 3 minutes or until they are bright green and tender-crisp.

4. Remove the kernels from the corncob using a small knife and transfer them into a bowl. Add the cucumber, green chilli and lime juice. Toss to coat

5. Break the fish into large pieces. Divide the beans, fish, corn mixture, and diced avocado among the tortillas. Season with salt and pepper.

6. Serve with coriander and lime wedges.

To make the tacos even more substantial, top them with shredded lettuce, diced tomatoes, grated cheese or sour cream. For a vegan-friendly option, swap out the fish for tofu or mushrooms. If you're feeling adventurous, you can also add a few slices of fresh mango to the tacos to give them a fruity twist. Enjoy!
