Ingredients
2 tablespoons extra-virgin olive oil, divided
1 small onion, sliced
2 cups small cauliflower florets
¼ cup water
5 cups chopped kale
3 cloves garlic, minced
1 teaspoon chopped fresh thyme
½ teaspoon salt, divided
½ teaspoon ground pepper, divided
8 large eggs
½ teaspoon smoked paprika
½ cup crumbled goat cheese or shredded your cheese of choice
Directions
Preheat the oven to high setting (180-200 degrees should do). Make sure a rack is placed in the upper third of the oven.
In a large cast-iron skillet, heat 1 tablespoon of the olive oil over medium heat. Add the onion and cook until starting to brown, 2 to 4 minutes. Add the cauliflower and ¼ cup of water. Cover and cook until the cauliflower is just tender, about 6 minutes.
Then add the kale, garlic, thyme and 1/4 teaspoon each of the salt and pepper into the skillet and cook until the kale is wilted, stirring occasionally, for 2 to 3 minutes.
In a large bowl, whisk the eggs, smoked paprika, and the remaining ¼ teaspoon of each of the salt and pepper until combined. Next, add the vegetables to the egg mixture and gently stir.
Next, clean the pan and heat the remaining 1 tablespoon of olive oil over medium heat. Pour the egg mixture into the pan and top with cheese. Cover and cook until the edges are set, and the bottom is brown, about 4 to 5 minutes.
To finish, transfer the skillet to the oven and bake until the top of the frittata is cooked for 2 to 3 minutes.
