Cauliflower and potato bake

Cauliflower and potato bake is a dish made with roasted cauliflower, potatoes, and a cheese sauce. It is typically served as a side dish or main course. This dish is creamy and comforting. The cheese sauce is rich and flavourful, while the roasted cauliflower and potatoes add a crispy and slightly salty texture.

Ingredients:

500g potatoes
1 large cauliflower (about 1.2kg), cut into bite-size florets
1 tbsp unsalted butter, plus extra for the baking dish
1 garlic clove, finely chopped
2 onions, finely sliced
3 eggs
150ml whole milk
200ml whipping cream
150g gruyère, grated
1 pinch of ground nutmeg
1 tbsp chives, finely chopped
Olive oil



Instructions:

1. Preheat the oven to 180 degrees Celsius.

2. In a large pot of boiling water, cook the potatoes for 5 minutes. Add the cauliflower florets and boil for another 3-5 minutes until both are tender.

3. Drain and set aside to dry.

4. Grease a baking dish with butter.

5. Heat the olive oil over medium heat in a frying pan. Add the onion and garlic and cook until softened. Remove from heat. 6. Add the cauliflower and potatoes to the baking dish.

6. Whisk together the eggs, milk and cream in a jug. Then stir in half of the cheese. Season with nutmeg, salt, and pepper, and pour over the vegetables.

7. Sprinkle with the remaining cheese and bake in the oven for 25 minutes until golden.

8. Scatter over the chives and serve.



How to make it extra special:

1. For a more flavourful dish, try adding chopped herbs or spices to the cheese sauce.

2. For a more substantial meal, try adding cooked chicken, bacon, or sausage to the dish.

3. Serve the bake with a side of steamed broccoli or other vegetables.

Way too many ingredients which I don't stock in my frige or larder, and that's apart from my wife's allium allergy.. so a big no no from me.:cry:
 
There are a lot of ingredients but it is a change from ordinary potato bake - I will also be adding some fresh green vegetables :)

Strange that it does not mention if you chop of slice the potato. The image looks as though the potatoes are in wedges.
