Caramelised Chicken and Rice Noodle Stir-Fry

When it comes to a delicious home-cooked meal, a good old-fashioned stir-fry is at the top of our list. It’s satisfying, easy to make, and relatively affordable! But if you’re looking for a fresh take on it, then you need to try this Caramelised Chicken and Rice Noodle Stir-Fry recipe. The sweet sauce, tasty bits of chicken, and chewy noodles make this version an absolute winner!

Here are the ingredients you need:

1. A bunch of choy sum
2. 70g of rice vermicelli noodles
3. A tbsp of peanut oil
4. 600g of chicken thigh fillets, excess fat trimmed, cut into 3cm pieces
5. Three tsp of finely grated fresh ginger
6. Three garlic cloves, crushed
7. 70g of tomato paste
8. 45g of brown sugar
9. A tbsp of light soy sauce
10. A tbsp of Chinese cooking wine
11. A quarter cup of chopped fresh coriander leaves, plus extra leaves, to serve
12. Two green shallots, trimmed, thinly sliced


Start by removing the stems from the choy sum before coarsely chopping them. Set them aside and cut the leaves into thirds. After that, place the leaves and the noodles in a heatproof bowl. Pour over enough boiling water to cover. Set them aside for about 7 minutes to soak. When the time is up, drain and set aside.

In the meantime, heat some oil in a wok over high heat. Add half of the chicken and cook for 5 minutes or until they become golden brown. Transfer the cooked chicken pieces to a plate and repeat with the remaining ones.

Add the choy sum stems, ginger, and garlic to the same wok. Stir-fry for about a minute or until aromatic. Add the tomato paste, and cook for another minute. Pour about 80ml of water into the wok and stir thoroughly to combine. Sprinkle in some brown sugar and let the ingredients simmer for 5 minutes.

Return the cooked chicken pieces to the wok along with the soy sauce and wine. Then, let them simmer for 20 minutes or until the sauce becomes thick or reaches a consistency that’s similar to syrup. Add the drained noodles and leaves. Toss well until well combined. Top it all off with some chopped coriander and half of a shallot. Serve with some of the remaining shallot and extra coriander leaves.
