Butter bean, chorizo & spinach baked eggs

Chances are, you’ve had every meal imaginable involving eggs — but hold that thought because here’s one you could definitely give a go! Try this easy and healthy butter bean, chorizo, and spinach-baked egg recipe.

Not only is it a tasty and nutritious way to start or end your day, but it’s also super easy to make. All you need are simple ingredients, and you’ll have a delicious breakfast ready in no time.


Ingredients:

1/2 tablespoon of olive oil

1 red onion, sliced

1 garlic clove, chopped

1 teaspoon of chilli flakes

100 grams of sliced chorizo

100 grams of butter beans

100 grams of spinach

4 medium eggs

1 tablespoon of coriander (optional)

If you have all you need, then let’s get cooking:

Preheat your oven to 220 degrees Celsius (200C fan).

Heat a medium-sized frying pan (ovenproof, if possible) over medium heat and add the olive oil. Once heated, cook the onions for about three minutes or until soft.

Then, add the garlic, chilli flakes, and sliced chorizo, and fry for another two minutes. Next, add the butter beans and a generous pinch of salt. Stir everything together and cook for two more minutes.


Slowly add the spinach and a splash of water, stirring it until the spinach is wilted. Remove the pan from the heat when done.

Transfer the mixture to a medium-sized casserole dish if your pan is not ovenproof. Skip this step if your pan is ovenproof.

Crack four eggs over the mixture. Alternatively, you can create four hollows in the mixture using a spatula or spoon and pour an egg into each. Sprinkle with a dash of salt, freshly ground pepper, and extra chilli flakes (if desired).

Finally, bake in the oven for 5-6 minutes until the egg whites are set, and the yolk is still runny. Once done, remove from the oven and top with coriander (if you want to).
