I make these all the time for my son inlaw.
They are great as a meal served with salad or just as a side.
Makes 12
Prep time 15 min
cook time 12 - 15 minutes
Ingredients:
2 sheets ready rolled pastry
150g ham chopped
12 cherry tomatoes halved
2 tablespoons chopped fresh chives ( I have left out or added dried chives )
125g ricotta cheese
3 tablespoons freshly grated parmesan cheese packet parmesan is also OK
3 eggs lightly beaten
1/2 cup of Greek yoghurt
Salt n pepper
Method :
Preheat oven 200 deg C / 180 C fan-forced lightly oil a non stick muffin pan
1) cut each piece of pastry into 6 squares. Press these into the greased muffin pan
2) divide ham, tomatoes , and chives between each of the pastry bases
3) put ricotta, parmesan, eggs, yoghurt and salt n pepper into a bowl and whisk together
4) pour this mixture over the ham and tomatoes and bake for12 - 15 minutes or until just brown
Perfect as a finger food or served as a meal with salad
