Broccoli and Feta Quesadilla

With a perfect combination of flavours and textures, this quesadilla is a perfect balance of healthy and delicious, a surefire hit for any meal. Ingredients:

70g broccoli, cut into florets

70g can of chickpeas, undrained

20g feta, crumbled

1 small tomato, finely chopped

1 x 42g low-carb tortilla wrap

20g baby spinach



Instructions:

1. Begin by steaming the broccoli florets for 3-4 minutes, or until tender and bright green, then drain and coarsely chop.

2. In a small bowl, roughly mash the chickpeas with a fork while keeping some texture. Mix in the broccoli, feta, tomato, and season.

3. Spread the mashed chickpeas on half the wrap and top it with the broccoli mixture and spinach.

4. Fold the wrap to enclose the filling and, place it in a sandwich press, toast until golden brown. You can use a skillet or griddle if you don't have a sandwich press. Heat the skillet over medium heat and cook the quesadilla for 2-3 minutes on each side or until golden and crispy. And your quesadilla is ready to serve.

To make this dish extra special, try adding sliced avocado or diced capsicum to the filling. For a fun twist, you could add diced chicken to the mixture to make a more filling meal. This recipe is an easy, quick, and healthy lunch option. Enjoy!
