Breakfast Just Got More Delicious: Introducing Overnight Weetbix

What’s more, this recipe can be made completely gluten-free, so everyone can enjoy it without worry!



If you’re bored of having the same old baked oats or overnight oats for breakfast, this Overnight Weetbix might be just the change you need – it’s a 'food trend' that’s been sweeping social media these days, and it’s definitely worth giving a try. Lucky for us, The Conscious Plant Kitchen whipped up a beautiful recipe!

Whether it’s the moreish Peanut Caramel layer or the sweet Biscoff Biscuit layer, there’s sure to be something for everyone in this tasty treat. Read on for instructions and the ingredients you’ll need for this delicious, high-protein breakfast!

Ingredients (serves 1):

- 2 Weetbix. You can choose either their wheat-based variant or the gluten-free option if you wish. You can also use their ‘little kid’ version which comes with a nutrition boost of iron.

- 1/3 cup milk – I like to use unsweetened almond milk.

- 1 teaspoon maple syrup – or, any other liquid sweetener such as honey or malt syrup; alternatively, you can use sweetness-free alternatives options like sugar-free syrup or liquid stevia

- 1 teaspoon chia seeds



For the yoghurt layer:

- 2.5 tablespoons yoghurt of your choice

- 1 tablespoon protein powder (optional)

- ¼ teaspoon ground cinnamon or vanilla extract (for extra flavour)

For the Peanut Caramel Layer:

- 2 tablespoons peanut butter OR Biscoff spread

- 2 teaspoons maple syrup – omit this if using Biscoff spread as it is already sweetened

- 2 teaspoons yoghurt of choice

For the Chocolate Layer:

- 2 tablespoons dark chocolate chips

- 2 teaspoons milk

- 1 teaspoon yoghurt of choice



Directions:

1. Start by crushing the Weetbix biscuits in an airtight container using your hands until they form a thin crumble. Add chia seeds, milk, and maple syrup and stir until all ingredients are combined.

2. Make the yoghurt layer by mixing the yoghurt, protein powder, and cinnamon/vanilla extract in a separate bowl. Spread this layer onto the Weetbix layer in the airtight container.

3. Prepare the Peanut Caramel or Biscoff layer by whisking together the relevant ingredients in a separate bowl. Spread this layer on top of the yoghurt layer.

4. For the chocolate layer, melt the chocolate chips and milk together in a microwave-safe bowl for 30-45 seconds. Stir in cold yoghurt to form a ganache and spread this on top of the other layers.

5. Close the lid of the container and refrigerate overnight (minimum one-hour refrigeration).

Serve your breakfast with a top-dusting of nuts, cacao, or a biscuit (Lotus biscuit is a great choice!), or use some extra chocolate chips and peanuts to make it extra special.

Storage Instructions

The prepared Overnight Weetbix can be stored in a sealed container in the fridge for up to 3 days.

Sounds good but could not be bothered to do it!!! Weetbix are fine on their own with just some blueberries etc and milk or yogurt!
