Braised beef and vegetables

Are you craving a hearty, comforting meal? Look no further than braised beef and vegetables. This dish is traditionally made by slowly cooking beef and vegetables in a covered pot. The result is a rich, flavourful dish perfect for a weeknight dinner.

Ingredients:

1 tbsp olive oil
1 onion, chopped
1 carrot, chopped
1 celery stalk, chopped
400g beef chuck steak, chopped
1 cup beef stock
1/4 cup tomato paste
Mashed potato to serve



Instructions:

1. Preheat oven to 160°C.

2. Heat olive oil in an ovenproof casserole dish saucepan over medium heat.

3. Add onion, carrot and celery and cook for 10 minutes or until softened.

4. Remove the vegetables from the pan and set them aside.

5. Increase the heat to high and add the beef to the pan. Cook the beef in batches for 2-3 minutes until browned.

6. Return the vegetables to the pan and add the beef stock and tomato paste.

7. Bring to a boil, then cover with a lid and place in the oven. Cook for 3 hours or until the beef is tender.

8. Serve with mashed potato.

Ways to make this dish extra special:

- Add some red wine to the pan when cooking the beef for extra richness.

- Stir through some chopped fresh thyme or rosemary before serving.

- Top with crispy fried onions or bacon for extra flavour.
