Braised Artichokes And Vegetables

I'm adding this recipe for Artichokes

I hear from alot of people they have never tried them as they have no idea how to cook them.

My family loves them but I will be honest they are not my favourite vegetable.

Ingredients:
4 x whole fresh Artichokes

1 x onion halved then thinly sliced

1 x garlic clove or 1 x teaspoon of jar garlic

1 small bunch of dill

4 x cups of vegetable stock Or 4 cups water with 4 vegetable stock cube

2 x carrots sliced or cut into chunks

1 x large potato cut into small pieces

2 lemons 🍋

1 teaspoon each of pepper n salt

2 tablespoons of oil ( I use olive oil but any oil is good )

2 x plain flour mixed with 1/4 cup of water

Note ; you can add other vegies eg zucchini celery ect

Method:
1. Cut the stem of the artichoke, cut the top off the Artichokes slightly. Pull the first layer of leaves off and discard

2. In a frypan gently fry onion till soft not brown. Add garlic and cook for 2 minutes

3. Add vegetables and stir through and cook for 5 minutes on medium heat

4. Transfer to a large pot or slow cooker ( see note below)

5. Great the rind of the lemons then juice them , add both juice and rind to pot.

6. Add stock, Artichokes and chopped drill to pot and salt n pepper and flour mixture

7. Bring to the boil the reduce heat to low to medium and cook with lid on for 1 1/2 hours , (see note below )

8. Serve by itself hot with crusty bread.


Notes: If I have time I will cook this in the morning in a slow cooker on high for around 6 hours.

The picture is before I added it to the slow cooker

If you don't have a slow cooker I would buy one it's great for cheaper cuts of meat and just tenderise food beautifully
