3/4 cup (185ml) milk
1/3 cup (80ml) vegetable oil
2 bananas, mashed
1 cup (150g) frozen blueberries
Icing sugar to dust
To start, line a 12-hole muffin pan with paper cases and preheat your oven to 180°C. Mix two cups of self-raising flour, 2/3 cups of brown sugar, and 1 teaspoon of ground cinnamon in a large bowl.
In a separate medium bowl, whisk together the egg, 3/4 cup of milk, 1/3 cup of vegetable oil, and two mashed bananas. Gently stir 1 cup of frozen blueberries and divide the mixture evenly among the muffin cases. Be careful not to stir the mixture too much, as this will squish the blueberries! Next, add the wet ingredients to the dry ingredients and mix until combined.
Finally, bake for 20-25 minutes, or until a skewer inserted in the centre of a muffin comes out clean.
