Beef Curry Hotpots

This is a really quick weeknight dinner or a lazy Sunday dinner or lunch.

Recipe by taste
Ingredients
1 tablespoon olive oil
1 brown onion, finely chopped
2 garlic cloves, crushed
500g 4 star Beef Mince
1 tablespoon curry powder
400g can diced tomatoes
1 tablespoon Worcestershire sauce
3 cups frozen peas, carrots and corn frozen vegetable mix
4 sheets filo pastry
Method
1. Preheat oven 200°C / 180°C fan-forced.
Heat the oil in a large non stick pan over high heat. Add onion and cook for 3 minutes or until onion starts to soften. Add the garlic and cook for 30 seconds. Add the Mince and cook , stirring with a wooden spoon to break up lumps for 5 minutes or until Mince changes colour. Stir in the curry powder and cook for 1 minute. Add the tomatoes, Worcestershire sauce and vegetables and cook for 5 minutes or until the mixture thickens slightly. Season with pepper and salt.
2. Meanwhile place 1 pastry sheet on a clean work surface. Lightly spray with olive oil spray. Fold in half and gently scrunch. Repeat with remaining pastry sheets.
3. Divide Mince mixture between four 2 cup pie dishes or ramekins.
Arrange pastry sheets over the Mince mixture and Lightly spray with olive oil spray.
Bake for 10 minutes or until heated through and pastry is golden
