Beef Bouruignon

Easy and really delicious meal. Even better the next day !!
Prep time : 10 minutes
Cooking time: 2 hours
Serves 6

Ingredients
1 kg topside or round steak, cubed
Plain flour seasoned with salt n pepper
2 tablespoons oil
3 rashers of bacon, rind removed, chopped
12 pickling onions
1 cup Red wine
2 cups beef stock
1 teaspoon dried thyme
200g button mushrooms ( if I'm eating I leave out but family love the addition)
2 Bay leaves.
Method
1. Toss the meat in seasoned flour to coat.shaking iff excess.
2. Heat oil in large pan, cook bacon over medium heat.
Remove from pan, then add meat and brown well in batches.
Remove and set aside.
Add onions to pan and cook until golden.
3. Return bacon and meat to pan with remaining ingredients. Bring to boil, reduce the heat and simmer covered for 1 1/2 hours. Stirring occasionally, until the meat is very tender.
Serve with mashed potatoes and steamed fresh beans.
Storage: can be refrigerated in an airtight container for upto 3 days
