Beef and black bean enchiladas

This dish is a delicious and easy to make Mexican dish. It’s packed full of flavour and is very hearty. The enchiladas are filled with a mixture of beef and black beans and then covered in a delicious sauce!
Ingredients:
1 tablespoon oil
1 onion, chopped
1 garlic clove, minced
500g lean beef mince
1 (400g) can black beans, drained and rinsed
1 tablespoon chilli powder
1 teaspoon cumin
1 teaspoon salt
1/4 teaspoon pepper
1 (400g) can of crushed tomatoes
12-15 flour tortillas
1 cup shredded cheddar cheese
Method:
1. Preheat oven to 190 degrees Celsius.
2. In a large frypan, heat oil over medium-high heat.
3. Add onion and garlic and cook until softened.
4. Add minced beef and cook until browned.
5. Add black beans, chilli powder, cumin, salt, and pepper.
6. Stir in crushed tomatoes.
7. Fill each tortilla with the beef mixture and place in a baking dish.
8. Top with shredded cheese and bake for 10 minutes.
9. Serve with a side of salad or rice.
