BBQ Pulled Jackfruit Nachos

They’re easy to make, a crowd-pleasure and easy to alter according to dietary requirements; yes, we’re talking about the humble nacho.

This is our twist on a beloved movie night meal! The jackfruit means it’s vegetarian friendly and cheaper than the usual pork.

Where can I find jackfruit? Woolworths and Coles stock young green jackfruit (in brine) in their cans aisle. It’s important that you buy this type as mature jackfruit has a different, sweeter taste.

So why not try something new and whip up BBQ Pulled Jackfruit Nachos this weekend?



Ingredients

1 can of jackfruit in brine – drained and rinsed
1 can of black beans – drained and rinsed
1 Small can of corn kernels – drained and rinsed
2 tbsp oil
1 packet of taco seasoning
1/2 tsp smoked paprika
3 cloves of garlic – minced
1 small brown onion – diced
1 cup of water
½ cup barbeque sauce
2 tbsp tomato paste
1 bag of tortilla chips
1 bag cheddar cheese (dairy-free version, if required)

You’ve got free reign when it comes to toppings. These are some suggestions:
Sour cream (Optional)
Salsa (Optional)
Guacamole (Optional)
Jalapeno (Optional)
Fresh tomato – diced (Optional)



Instructions

Toppings
Drain and rinse the jackfruit
Heat 2 tbsp of oil in a pan on medium heat. Add the onion and corn and saute for 2 minutes or until golden brown.
Add the jackfruit, minced garlic, taco seasoning, smoked paprika, barbecue sauce, tomato paste, and 1 cup of water. Cover with a lid and simmer on medium-low for 15-20 minutes, or until the jackfruit softens. About five minutes before it’s done add the drained and rinsed black beans
Make sure you stir occasionally and break down the jackfruit as it softens
If it dries up too much, add a splash of water, if it’s too soggy, take the lid off and cook the water out.
Once jackfruit has cooked, shred it with a fork

Nachos
Preheat the oven to 180 degrees
Lay tortilla chips out on a baking sheet and cover them with cheese.
Bake for 10-15 minutes, until cheese softens and melts slightly. Check to make sure they don’t burn.
Serve

Enjoy with your choice of toppings like sour cream, salsa, guacamole or cilantro.
