6. 550 grams of chicken thigh fillets
7. One tablespoon of vegetable oil
8. 3 cups of freshly cooked medium-grain brown rice
9. 2 small avocados, peeled, halved, pitted, thinly sliced
10. 2 Lebanese cucumbers, chopped
11. 200 grams of tomatoes, halved
12. 2 spring onions, thinly sliced
13. Half a cup of fresh coriander leaves
First, prepare the marinade. In a small bowl, whisk the soy sauce, lemon juice, sugar, ginger and sesame oil until the sugar has dissolved. Then take a sealable plastic bag, and add your chicken, vegetable oil, and a tablespoon of soy dressing to the bag.
Ensure that the chicken fillets are fully coated with the marinade before placing the bag in the fridge for at least 15 minutes. You can also opt to leave it overnight. Don’t forget to refrigerate the remaining soy dressing.
