Banana Muffins Dairy Free

I bake for my grandkids who have dairy allergies,
I hate wasting food and when those banana's go really soft and no one wants to eat them , then this is the perfect recipe as it requires ripe banana's.

I have an abundance of banana's from my tree , even after giving heaps away , I still have to much.

Prep time : 15 min
Cook time: 30 minutes
Makes 24

Freezes well , either in small zip lock bags, wrapped in glad wrap or in freezer containers.

You can also half or double the recipe

Ingredients

. 3 cups plain flour
. 1 cup white sugar
. 1/2 brown sugar
. 2 teaspoon ground cinnamon
. 1 teaspoon nutmeg
. 2 teaspoon baking powder
. 1 teaspoon bi carb soda
. Pinch of salt
. 2 cups of mashed banana around 6 -8
. 1 cup of vegetable oil
. 1 cup of coconut milk ( from Coles or Woolies)

Method

Preheat oven 175 C deg or 165 C fan forced
Grease 2 x 12 cup muffin tin or add muffin cases.

1. Mix flour, white sugar, brown sugar, cinnamon, nutmeg, baking powder , bi carb soda and salt in a medium bowl.

2. In a seperate bowl Stir banana's, oil and coconut milk together .

3. Stir in banana mixture to flour mixture until combined

4. Spoon mixture into muffin tins , 3/4 fill them .

5. Bake in preheated oven for 30 to 35 minutes or until a tooth pick comes out clean .
