Baked Potatoes with Cream Cheese

My favourite vegetable has to be the humble potato.
It's amazing how there are so many ways to serve them.
One of my favourites has to be this one.

INGREDIENTS
- 4 large potatoes
- 1 x tbsp.oil
- 250g cream cheese tubs or spreads or light cream cheese spread or tubs
- 2 cloves garlic , crushed
- 2 tbsps.finely chopped chives
- 4 rashers bacon , chopped and fried, to garnish ( optional)
- Extra chives , for garnish
Brush the potatoes lightly with oil and bake at 200 °C for 45 minutes to 1 hour, or until cooked through.
Combine cream cheese with the garlic and herbs. Cut a deep cross diagonally through each of the potatoes and spoon over the flavoured cream cheese and top with additional chives and bacon. Serve immediately.
Serve on their own or with a side salad
