Baked Banana and Sultana Oat Bars

Preparation Time : 5 minutes plus standing
Cook Time : 40 minutes
Yield : 12
Ingredients
• 3 ripe bananas (medium size) *- mashed
• 2 eggs - lightly beaten
• 60 grams whole meal plain flour - sifted *
• 45 grams rolled oats - old fashion type NOT
instant
• 80 grams sultanas
• half teaspoon ground cinnamon
• 1 teaspoon vanilla extract
• 1 teaspoon baking powder *
* Only use medium size bananas, as I used large
and the taste was quite overpowering
I used 60 grams of white self raising flour, so
therefore omitted the baking powder
I never had any whole meal flour in the pantry
Method
• Preheat oven to 180•C - Conventional Oven or
160•C Fan Forced. Grease and line a 20 square
pan with baking paper
• Place all ingredients in a large bowl. Stir
gently until just combined. Spoon mixture
into prepared pan and spread out evenly
• Bake in oven for 40 minutes or until golden
and cooked through. Cool completely in pan.
Cut into 12 bars.
Store in airtight container in the refrigerator

1 gram fat, 1 gram saturated fat, 15 grams
carbohydrates, 8 grams sugars, 2 grams
dietary fibre, 40 milligrams sodium
