Bacon Cauliflower Soup

It’s the perfect autumn and winter warmer, guaranteed to please the hungriest bellies. To make this Bacon Cauliflower Chowder, you will need:
4 slices bacon, cut into 1' pieces
1 medium yellow onion, chopped
2 medium carrots, peeled and chopped
2 celery stalks, chopped
Kosher salt
Freshly ground black pepper
2 cloves garlic, minced
2 tablespoons flour
2 sprigs thyme, stripped and chopped
1 head cauliflower, cut into small florets
1.1 litres vegetable stock
1 cup whole milk
Cook bacon over medium heat in a large pot. After it’s cooked, set aside 2 tablespoons of the leftover fat and transfer the bacon to a plate lined with paper towels to drain the excess oil.
Alternatively, skip setting aside the bacon fat and thoroughly drain the bacon strips of oil by stamping on them with the flat end of a fork or spoon.
The healthiest option for this recipe would be to skip the bacon altogether, which would also be fine! A few great alternatives to bacon would be shiitake mushrooms and fried shallots.
Add onion, carrots, and celery to the pot — season with salt and pepper. Cook the vegetables over medium heat for about five minutes or until soft. Add garlic, and after a minute or so, stir in the flour and cook for two more. Add in the thyme and cauliflower.
Next, reduce the heat and pour in stock and milk. Simmer until the cauliflower is fork-tender, which takes about 15 minutes.
And you’re done! Ladle the soup into bowls, and sprinkle the bacon on each serving, if you used it.
