Apple Raspberry Pies

Here are the ingredients you need:

1. Two pink lady apples, halved, cored, thinly sliced
2. Two tablespoons of caster sugar
3. Two teaspoons of lemon juice
4. Three sheets of frozen puff pastry, partially thawed
5. Half a cup of raspberry jam
6. Half a teaspoon of ground cinnamon
7. 20 grams of butter, melted
8. A tablespoon of icing sugar
9. 300 millilitres of thickened cream, whipped, to serve


Place the apples, sugar, lemon juice and one-third cup of water in a saucepan over medium heat. Allow the mixture to cook and occasionally stir for 5 minutes, or until the apple is tender. Using a slotted spoon, transfer the apples to a bowl and let them cool for about 5 minutes.

Preheat your oven to 180 or 160 degrees Celsius, fan-forced and grease a 12-hole muffin pan. Cut each sheet of pastry into four equal strips and lay a strip of pastry onto a flat surface with the long edge closest to you. Spread two teaspoons of raspberry jam onto the pastry before sprinkling some cinnamon.

Arrange a few apple slices on top of the pastry (with the skin edge up), overlapping them slightly and making sure that the apple slices are slightly overhanging at the top. Fold the bottom edge of the pastry over the apples and roll up the pastry from the edge, forming a scroll shape. Place the scroll (apple-side up) into one of the prepared muffin holes, and repeat the process with the remaining strips of pastry.

Brush the pies with melted butter and pop them in the oven for 25 to 30 minutes or until the pastry is golden and puffed. Let the pies cool in the pan for 5 minutes before carefully transferring them to a baking paper-lined wire rack. Once the pies are cool, dust them with icing sugar before serving them either warm or cold with some whipped cream.
