APPLE CHUTNEY

Ingredients - 6 Granny Smith apples, 2 cups organic apple cider vinegar, 2 cups dark brown sugar, 4 large brown onions, 1 cup raisins, 1 cup sultanas, 1 teaspoon cinnamon, 1 teaspoon mace (substitue with nutmeg)
Method - Peel, core & chop apples to a small dice. Finely chop onions. Put all ingredients together in a large pot & simmer gently for a few hours. Add a little water if it seems to be getting a bit dry. I often turn it off & leave to sit overnight, cooking it again the next day to allow the flavours to meld. Bottle while warm into sterilised jars. It is best left for a month before using to allow the flavour to mature.
