APPLE AND CHILLI JELLY
Just finished making this....it is the best with blue vein cheese
Recipe
Ingredients step 1
2kg any type apples cut up and leave skin on and cores in...
Peel of 1 lemon...
4 teaspoons chilli flakes...
2 litres water....
Ingredients step2
1 and a half kg white sugar
1 tsp citric acid
juice of one lemon
4 red cayne pepper chillies
Method step 1
Put all ingredients in a large pot and boil till apple is soft and mushy, around half an hour....
Strain into muslin cloth and hang over the pot overnight...
Dont squeeze your mixture through the cloth as it makes the jelly cloudy...
Method step 2
In the morning dispose of what is in the muslin cloth...add 1 and a half kgs white sugar and juice of 1 lemon and 1 tsp of citric acid to the liquid and bring to a steady boil...
While it is heating deseed and finely chop 4 red cayne pepper chillies and add it to the liquid...
Put a saucer in the freezer ready for a set test...
Boil steadily for around half an hour then spoon a bit onto the saucer and after 30 seconds run your finger through it and if it stays apart it is ready to bottle in clean sterilised jars or keep boiling until ready...
After you have bottled it you need to turn or shake the jars to disperse the chillies evenly util the jelly is set....
