Air Fryer Muffins

Make beautifully golden brown muffins in your air fryer in no time. Add blueberries, chocolate chips or dried fruit, whatever you like. You can even double the mixture to make more

When it's a hot day I hate having my oven on and this is when I say thank Goodness for my Airfryer. Very little heat comes from it.

    Serves 6 - 8

See below for normal oven temperature and time

INGREDIENTS
  • 60ml vegetable oil
  • 4 tablespoons Greek Yoghurt
  • 1 egg
  • 2 tbsp milk
  • 5 tablespoons caster sugar Ive also used brown sugar
  • 3/4 cups self raising flour
  • ¼ tsp Bicarb Carb soda
  • 1/4 cup blueberries
    chocolate chips or dried fruit

Method​

  • Step 1​

    Heat the air fryer on 160C for 2 mins. Mix the oil, yogurt, egg and milk in a large bowl, then fold in the sugar, flour and bicarbonate of soda and combine well. Fold in the blueberries, chocolate chips or dried fruit, if using. Spoon the mixture into silicone cases or an air fryer muffin tin filled with paper cases to three-quarters full. You should be able to make 6-8 muffins, but you may have to bake them in batches.
  • Step 2
Place the cases or tin in the air fryer basket and cook for 12-15 mins until the muffins are golden brown and a skewer inserted into the centre comes out clean

Can I use paper cases?​

You can use paper cases in an air fryer, but they work best if you put them in an air fryer cake tin or muffin tin as they’re not as sturdy as silicone ones.

What temperature in the oven?​

If you want to cook these in the oven instead, bake at 200C/180C fan/gas 6 for 20-25 mins until risen, firm to the touch and a skewer inserted into the centre comes out clean.

What are the benefits of using the air fryer to bake in?​

The air fryer requires less cooking time and uses less energy in general, so it’s a more energy- and time-efficient way to bake, especially when cooking smaller batches

Nice ones , I love muffins , so versatile, can change and chop , I never use refined sugar , there is plenty in the fruit .
I keep always some in the freezer for unexpected visitors or lazy days .

My daughter popped in for dinner and told me they have used up all the banana bread and muffins that she had frozen. I'm guessing I'm making muffins and banana bread tomorrow 😋
I’m making banana cake today Sunday as it’s a scorcher outside but cool in here., plus I’ve got no num nums to eat.😋
Oooh just had a 💡 bulb moment wonder if it’ll cook outside if I put it in the sun 🤣

I saw your temp is 40 plus. We were supposed to have 34 but it is 38 !!

I have to make cupcakes this afternoon and need to do it in the oven. My youngest turns 20 tomorrow and we are all going for brunch. Instead of a birthday 🎂 cake she wants cupcakes which will be easier for the cafe

They removed all the breathing tubes yesterday. He is now breathing on his own.
He still has the feeding tubes in but once he is fully on the breast they will remove them. They said within a week.
He should be home in 2 weeks if everything goes well. I told my daughter not to rush it.

Most of her siblings chipped in a got her a monitor that she will connect to Leo's foot when he goes home and if he stops breathing ect an alarm will go off.

She didn't get to have a baby shower so we all got her everything to surprise her pram, cot ect.
We were going to give her a baby shower when he went home but unfortunately we can't due to she is going to need to keep him away from people until he is 6 months old due to the risk of catching a flu.

Leo needed to have the breathing tube put back in on Tuesday , but it's just light oxygen.

He is having his very first bath tomorrow, so that's exciting. Up to now its just been sponge baths.

They still feel confident that he will go home in maybe 10 days.

He is now 3kg 150g

He's doing really well isn't he! Looking contented in that snapshot too.
