2-Ingredient Banana Soft Serve

Ingredients​

  • 6 bananas, peeled, chopped and frozen
  • 60ml (1/4 cup) lemon juice

Method​

  • Step 1
    Process frozen banana and lemon juice in a food processor, scraping down sides frequently, until mixture is smooth and resembles soft serve ice-cream. Transfer to a metal loaf pan. Place in the freezer for 2 hours or until just firm but still scoop-able.

Flavour Variations

Banana, blueberry & lime soft serve

Proceed with banana soft serve recipe adding 210g (11/2 cups) frozen blueberries and the finely grated rind of 2 limes to food processor. Top with fresh blueberries to serve.

Spiced honey banana soft serve
Proceed with banana soft serve recipe adding 60ml (1/4 cup) honey and 1 tsp ground cinnamon to food processor. Drizzle with extra honey to serve.

Choc, peanut & banana soft serve
Proceed with banana soft serve recipe adding 90g (1/3 cup) smooth natural peanut butter and 2 tbs cacao powder to food processor. Top with chopped roasted peanuts to serve.
