Ingredients:
1 1/2 tbsp extra virgin olive oil
600g chicken breast stir-fry
40g packet spice mix for fajitas
12 small white corn tortillas
2 green shallots
3 capsicums coarsely chopped
200g tub avocado dip
Crème fraîche, to serve
Fresh coriander sprigs to serve
Instructions:
1. Preheat the oven to 180°c
2. Drizzle 1 tbsp of oil over a baking tray. Spread chicken in the pan evenly.
3. Sprinkle the spice mix evenly over the top and toss it with your hands until the chicken is evenly coated.
4. Drizzle over the remaining 1/2 tbsp of oil on top. Place the baking tray in the oven and bake for 35 minutes or until the chicken is almost cooked.
5. Meanwhile, wrap the tortillas in foil and place them in the oven with the chicken. Chop the shallots.6. Add the capsicums to the tray with the chicken and toss to combine. Return to the oven for 10 minutes or until the chicken is cooked through.
6. Serve with the warmed tortillas, avocado dip, and crème fraîche. Sprinkle the chopped shallots and coriander on top for added flavour. Enjoy!
