Matchsticks

Remember those afternoons when you’d pop into the local bakery and spot delicious ‘matchsticks’ behind the glass? Ah, the layers of pastry sandwiched together with sweet jam and a cloud of whipped cream—it was the kind of treat you couldn’t wait to get home to eat! These days, they’re harder to find, but just the mention of them is enough to spark a smile and a craving.

I loved matchsticks and have actually made them.

I have posted an easy recipe before
 
I worked at A & GF Macdonalds cake shop in Brisbane for many years and they sold matchsticks. That was the first time I had ever seen them

A matchstick is pastry with jam and cream.
You can top it with icing like the one shown or just dust it with icing sugar.

Vanilla slice has custard in the middle this one has jam n cream

Yeah that is definately not a matchstick that I remember eating.🙁
 
We had these at the school canteen and they were popular. Our local cake shop has something similar still - it has all the old favourites. Though not good for the heart health though!
 
These are exactly how my mum made Matchsticks, but I really didn’t like them. Pastry, jam and cream, yuk!
 
I must admit, I preferred cream buns. They had real cream in those days.
