Oven Fried Chicken Drumsticks

I also have used thigh Cutlets.
I serve with airfryer chips and garden salad.

I also serve these as a side when I make chicken soup.

Ingredients​

  • 1 cup low fat plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 2 garlic cloves, minced
  • 8 chicken drumsticks skin removed
  • 1/2 cup plain flour
  • 1-1/2 teaspoons paprika
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • Olive oil cooking spray

Directions​

  1. In a large bowl or dish, combine yogurt, mustard and garlic. Add chicken and turn to coat. Cover and refrigerate 8 hours or overnight.
  2. Preheat oven to 180°C all oven types. In another bowl, mix flour, paprika, baking powder, salt and pepper. Remove chicken from marinade and add, 1 piece at a time, to flour mixture; toss to coat. Place on a wire rack over a baking tray; spritz with cooking spray. Bake 40-45 minutes

Looks quite good without being deep fried, must give them a go although I'll go with your suggestion of thighs. Cheers Suzanne
 
Would love to try these with thighs, only trouble is thighs seem to have a fair amount of fat which I don’t like, therefore may have to give the drumsticks a try first.

I always cut the fat off those thighs. However, both thighs and drumsticks will be yum.

You have to remember that the fat adds flavour to the dark meat of the thigh.
