Biscuit Strawberry Shortcake

This is something different and very nice. Great to make when you have friends over for morning tea .

Ingredients​

  • 2 cups plain flour
  • 3 tablespoons sugar, divided
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold butter
  • 1 cup milk
  • 3 punnets strawberries, chopped
  • 1 tablespoon orange juice
  • 1-1/2 cups whipped cream

Directions​

  1. In a large bowl, combine flour, 2 tablespoons sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Gradually stir in milk until a soft dough forms.
  2. Drop the dough by heaping tablespoonfuls into 8 mounds on a lightly greased baking tray ( I use baking paper) Bake at 210°C or 190 fan-forced, until lightly browned, 12-15 minutes. Cool on a wire rack.
  3. Meanwhile, place strawberries, orange juice and remaining 1 tablespoon sugar in a bowl; toss gently. Split shortcakes in half horizontally. Place bottom halves on serving plates; top with whipped cream and strawberries. Replace shortcake tops.

What other fillings or flavors can I add to this recipe?​

There are so many possibilities! While strawberries are the most popular, you can easily switch up the flavors with raspberries, blueberries, cranberries or blackberries. Bananas and stone fruits such as peaches and nectarines also make divine fillers.

Hi Suzanne Rose, can you use another juice apart from orange? I am allergic to them but the receipe sounds yummy.

Yes you can use lemon juice and even vanilla essence if using vanilla cut it down to 2 teaspoons

Sounds yum but by the time I've bought 3 punnets of strawberries its a very very expensive biscuit.

I posted this recipe last year in November when strawberries were cheap. Wait until summer when they are usually $2 .
I managed to buy strawberries 🍓 the other day 3 for $7

Also cooked apples or the can pie apples can be used and a very cheap alternative

Or maybe a good quality Strawberry jam, when not in season. (from Aldi ;) )
