Apricot and Ginger Jam

When I can I love making homemade jam and this is one of them

Prep time 15 min + overnight soaking
Total cooking time 1 hour
Makes 4 cups

Ingredients

500g dried apricots
5 cups water
200g preserved ginger in syrup, thinly sliced
3 3/4 cups sugar warmed
2 tablespoons lemon juice
1/2 cup shivered almonds

Method
1. Place whole apricots in a medium bowl, cover with water and soak overnight.
2. Transfer apricots and water to a large heavy based pan, Bring to the boil,reduce heat,cover and simmer 15 minutes or until apricots are tender.
4. Add ginger,sugar and juice to pan. Stir constantly over low heat until sugar has dissolved. Bring to the boil,reduce heat slightly and boil uncovered for 25 to 30 minutes or until mixturegels
Add the almonds and stir.
5. Spoon into hot sterilised jars and seal immediately.
Label and date jars when cooled.
Store in pantry or cupboard
