Slow Cooked Roast Beef

I love slow cooked beef and lamb , where it is so soft and just falls apart

Serve with either roast potatoes or mashed and steamed vegetables of choice.
Note
Can also be cooked in a slow cooker , follow steps 3, but at step 3 add everything to a slow cooker but increase cooking time to 6 hours.
You can substitute 1/2 cup of beef stock with 1/2 cup of red wine

Ingredients
- 1 tbs olive oil
- 1 piece beef roast around 1.2kg
- 1 pinch salt and pepper *to taste
- 1 onion chopped
- 2 celery sticks chopped
- 2 garlic cloves finely chopped
- 11/2 cup Beef Style Liquid Stock
- 2 tsp mustard powder
- 2 tbs Worcestershire sauce
- 2 tbs tomato paste
- 1/2 cup water
- 2 tbs gravy powder
Method
- Rub meat with oil, salt and pepper, and then brown in a frypan. Remove meat to a large saucepan / casserole
- Add onion, celery and garlic to the frypan, cook for a few minutes then add to meat
- Mix remaining ingredients together.
Pour over roast, add lid and cook on low until cooked as desired. ( around 4 hours) Remove roast from pot and cover to keep warm - Strain liquid into saucepan and bring to the boil. Cook until reduced then add gravy powder and stir until thickened.
- Slice meat and pour over gravy
