Waffles perfect Mothers Day Breakfast
Yesterday, I did a big breakfast, including bacon n eggs, pancakes, and these delicious waffles. I know they are not exactly healthy but hey you can spoil yourself sometimes .
I did use a waffles maker, which you can buy from kmart for $10.

Makes
10 waffles (about 4-1/2 inches)

Ingredients
- 2 cups plain flour
- 3/4 cup sugar
- 3-1/2 teaspoons baking powder
- 2 large eggs, separated, room temperature
- 1 1/2 cups whole milk
- 1 cup butter, melted
- 1 teaspoon vanilla extract
- Fresh fruit and icing sugar or syrup for serving
Directions
- In a bowl, combine flour, sugar and baking powder. In another bowl, lightly beat egg yolks. Add milk, butter and vanilla; mix well. Stir into dry ingredients just until combined. Beat egg whites until stiff peaks form; fold into batter.
- Bake in a preheated waffle maker according to manufacturer's directions until golden brown. Serve with fruit and icing sugar or syrup.
