Banana Crumble Muffins

This is another old deserving, faithful recipe I have.
My muffin tip is to only leave baked muffins in their tin for 1 minute or 2, before placing on a wire rack to cool.
This prevents bottoms going soggy.

2 cups self raising flour
1/3 cup raw sugar
1 cup mashed bananas
1 egg
1/4 cup oil
1/2 cup yoghurt

Crumble Topping: 25gr softened butter, 1/4 cup plain flour, 1 tablespoon brown sugar.
In a small bowl, rub butter with flour until well combined. Stir in brown sugar.

In a large bowl, stir flour and sugar together. Make a well in the centre.
In a separate bowl, add banana, egg, oil and yoghurt. Mix with fork until well combined.
Add to flour/sugar mixture. Mix until just combined.

Spoon mixture into a 12 hole muffin pan. Sprinkle with crumble topping.

Bake 190 degrees fan forced or 210 degrees for 20 minutes, or until golden brown.

I have a pack of dried blueberries & dried cranberries so will make your apricot slice when I get a chance. Been a bit busy with my mum in hospital with viral pneumonia.

Omg she is still in hospital, hopefully she will be out soon. My granddaughter who turned 7 the other day has been pretty sick. They stayed over 2 days before I tested positive for covud and we minded her the next day while her mum was at work, so I was sure she had covid but her test was negative then the doctor did blood test and swabs and came back pneumonia, he then did a chest exray . Now she is on antibiotics every 12 hours

Two of my sons have been sick , one that lives at home the other came last Sunday but stayed out side with hubby . That one his partner feels should be in hospital but he has still been working due to a major building job.
The one who is at home has been going to work as well. Both tested negative yet same symptoms as me. My son who isn't at home is way sicker than me.
Covid is raging again in Sydney but everyone is still going to work.

My daughter the teacher said there were so many sick kids at school and can't understand why the parents sent them.

I'm looking at doing a trip to WA in maybe September I want to do the train trip from Sydney to Perth on the Indian pacific. I would love to meet up with you and your wife for lunch .
 
When we went outside this morning we found this bunch had come down , there are around another 9 of these on the trees.

They just keep multiplying.

We have been giving away banana's and mangoes to everyone and they are coming back for more

I am so pleased for you. You have been released from your solitude. You appear to have achieved much in that time though. Does this mean you can get back into the kitchen now?

Sorry to hear the news is not good for other family members though. Is the situation bad in Sydney because people aren't taking proper precautions? Being involved in a major building project & working while very sick is not good, l hope he doesn't run himself into the ground & does end up in hospital without a choice. Is he a contractor there?

I feel for your daughter, being forced to look after other people's sick children. I guess parents are either working & won't take time off work to look after their child or don't work & don't want them at home. Not an ideal situation either way for teachers.

Your news caused me to mist up with anticipation. I have wanted to meet you for quite a while. Wifey is pleased with the prospect too because l have mentioned you to her, often.

Perhaps closer to your trip we could privately share web addresses if you were comfortable with that.

I look forward to your message. It is a long time to be on a train but less cramped than flying. This is a pleasure trip then l guess?

Your son's partner has a good boss & l am sure she is happier being at work than she would be at home.

Your two sons have difficult jobs & both obviously need to, 'carry on regardless' as they say. I don't envy building walls & seating in an area where l am constantly wet & property auctions are never easy.
